Description
This is not my recipe but I just had to share it with everyone because every single person on this planet deserves to eat John's chocolate chip banana bread. When I tried this recipe, I felt like the most skilled baker in the world. It made me feel unstoppable. I guess it is time for you to feel the same. Let's go. Original recipe: preppykitchen.com
How to make it
Prep the pan
Preheat the oven to 350F. Grease a 9 by 5 inch loaf pan with baking spray.
Mix the dry ingredients
In a medium bowl whisk together flour, baking powder, baking soda, and salt. Set aside.
Cream the butter and sugar
In a large bowl use a hand mixer to beat the sugar and butter together on medium high speed. Mix until fluffy and pale, about 3 minutes.
Add the eggs and bananas
Add the eggs one at a time. Scrape the bowl. Mix in the vanilla. Mix in the mashed bananas. I like to mash the bananas with a fork so they stay a little chunky.
Add the dry ingredients
With the mixer on low, add the dry ingredients. Mix until almost combined.
Add the chocolate chips
Reserve a handful of chocolate chips. Stir the rest into the batter. Pour the batter into the loaf pan. Sprinkle the reserved chocolate chips on top.
Bake
Bake for about 60 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 15 minutes. Then remove and finish cooling on a wire rack.
