How to make it
Prep the base
Boil the potatoes and cut them into small cubes. Put them in a bowl. Slice the onion into thin semi circles and add it to the bowl. Add the yogurt and mix everything together.
Make the tempering
Heat mustard oil in a small pan. When you see smoke, add methi. Let it sizzle. Add cumin. Add turmeric. Turn off the heat and pour this hot oil mix into the bowl. It will sizzle and smell amazing.
Season
Add black salt. Add regular salt. Add chilli powder. Roast the dried red chillies directly on the stove flame. Cut them into small pieces and add them to the bowl.
Add the sourness
Squeeze in lemon juice. Adjust depending on how sour your yogurt is.
Finish
Mix everything well. Garnish with chopped coriander. Eat it with warm rice, daal, and veggies or just eat it alone. Either way it is a taste of heaven.
