How to make it

Brown the butter

Place the butter in a small saucepan over medium low heat. Stir and scrape the bottom every few seconds. The butter will melt, foam, then start smelling warm and nutty. Cook until it turns golden brown and you see tiny brown bits. Remove from heat and let it cool for about 5 minutes. It should be warm but not scorching.

Mix the wet ingredients

In a large bowl combine the browned butter, brown sugar, and granulated sugar. Mix with a spatula. Add the egg, extra yolk, and vanilla. Mix well.

Add the dry ingredients

Add the flour, baking soda, and salt. Fold until no streaks of flour remain. The dough should be soft but not sticky.

Add the chocolate

Fold in the chocolate chips. Do not overmix. Cover the bowl and chill for at least 1 hour or up to overnight.

Scoop and bake

Preheat the oven to 350F. Line two baking sheets with parchment. Let the dough soften for about 20 minutes until scoopable. Use a cookie scoop to portion the dough. Place on the baking sheets with space between each cookie. Bake for 12 to 13 minutes until puffed and lightly golden around the edges but still soft in the middle. Sprinkle flaky sea salt on top.

Cool and serve

Let the cookies cool slightly on the tray. Eat warm for maximum happiness.
