Description
Aalu paratha was a special occasion food my mamu used to make. I used to devour three aalu parathas in one sitting with some tamatar ko achar. It is warm, cozy, and honestly one of the best comfort foods ever. Have a holy jolly paratha.
How to make it
Make the filling
Boil 3 potatoes and mash them. Add green chillies, crushed ginger, and diced onion. Heat mustard oil in a pan. When you see fumes, add 2 teaspoons methi. Add 1 tablespoon cumin. Add 1 teaspoon turmeric. Pour this hot oil mix into the potato mixture. Add 1 tablespoon salt and half tablespoon green chilli powder. Mix everything well. Your filling is ready.
Make the dough
Make a dough using all purpose flour and water. Take a small ball of dough and spread it into a circle. Put your filling in the middle. Close the circle and form a ball again. Use a rolling pin to roll it flat into a circle.
Cook the paratha
Heat a pan. Place the paratha on the pan. Let it cook for about 1 minute. Flip it and cook for another minute. Spread 1 tablespoon butter across the paratha and flip it. Let it cook. Glaze the top with butter again and flip it. Cook until golden and crispy.
Make the tamatar achar
Roast the tomato directly on the gas or boil it for 7 minutes. Burn 3 dried red chillies and crush them. Add garlic, salt, and Sichuan peppercorn. Grind everything into a paste. Serve with your aalu paratha.
